MR call’s new york style pigs in a blanket

I was sitting around the dining table one night with two of my neighbors, and we were dreaming up the perfect menu for the Park South VIP Modernism Tour. When I asked them what a good appetizer would be, both of them simultaneously chimed in with bright eyes and said, “Pigs in a Blanket!!!!”

That’s how I remember it anyway.

I’ll be honest, at first I thought they had lost their mind. So, I consulted my mother (Mom’s know best). I was like….is there any way we can make this work ? Her response, “I love Pigs in a Blanket’. At that moment I knew I had to cave. But, how to make more…Modern? How could I make the pastry wrapped sausage tell story of Park South TODAY?

A little back story about Park South, many of us have either lived in New York or currently do. We have a shared history in that great city, with a new love for Palm Springs. And that is what inspired the “Everything But The Bagel Pigs in a Blanket”. This recipe combines the best of our past with the a nod to our new hometown. A frank and caramelized onions wrapped in puff pastry (instead of crescent roll dough!), I top it with “Everything Bagel” seasoning from Trader Joe’s and serve with Gulden’s Brown Mustard. It’s a bit East Coast, and a bit West. Just like many of us residents at Park South.

This is for all of use that want the best of both worlds - and never want to compromise.

This recipe is one that I made and served the Park Imperial South complex for Modernism week in 2022. A familiar West coast treat updated with a bit of East coast attitude - much like our community. A new invention meant to showcase the innovative minds that honor our Palm Springs History here at Park South.

  1. Poke hot dogs with a fork a few times
  2. On a lightly floured work surface, working with one sheet of puff pastry at a time, roll into a 14-by-11-inch rectangle. Cut lengthwise into seven 1 1/2-inch wide strips. Cut each strip crosswise into 4 rectangles, each about 3 1/2 inches long.
  3. In a small bowl, beat together egg and 1 tablespoon water; set aside. Line baking sheets with parchment paper or a nonstick baking mat; set aside. Place a small scant teaspoon of the cartelized onions down. On top of that place a hot dog on the narrow end of one piece of pastry. Roll to enclose, brushing with some of the beaten egg to adhere; transfer to prepared baking sheet. Repeat process with remaining hot dogs and pastry. Brush the tops of puff pastry with egg and sprinkle with Everything Bagel seasoning. Transfer to refrigerator and let chill for 15 minutes.
  4. Preheat oven to 450 degrees.
  5. Transfer baking sheets to oven and bake until puffed and golden, about 20 minutes. Let cool briefly before serving with mustard and ketchup.

Notes

Design Notes: Hillshire Farm Lil' Smokies are truly the best. You need to stick with the classic here. As for the mustard, Gulden's Spicy Brown Mustard will never fail you. But the one thing you CANNOT substitute, is the Trader Joe's "Everything Bagel Seasoning". It is essential to get this recipe even partially correct.
